Gluten Free Keto Almond Banana Muffins

INGREDIENTS

2 ripe organic bananas

1 big scoop coconut oil, room temp

1/4 cup Runamok maple syrup

1 flax meal egg (1 Tbs flax seed meal, 3 Tbs luke warm water)

1/2 Tbs vanilla extract

1 cup Paleo baking flour

1 cup Hu Kitchen Keto Chocolate chips

 

PROCESS

Preheat oven at 350 degrees.

Make the flax egg with 1 Tbs flax seed meal and 3 Tbs luke warm water. Whisk that together. Set aside for 10 minutes (until goopy.)

In another bow, mix the bananas and the rest of the ingredients together. Use a hand mixer. Fold in the keto chocolate chips.

Line muffin tin with parchment paper muffin liners, add the mixture evenly to each liner. Top with keto chocolate chips.

Bake for 18-20 minutes to create delicious keto banana muffin.
