Citrus Red Cabbage Salad

INGREDIENTS

½ head of cabbage, shaved

1 jalapeño, deseeded and diced

½ red onion, chopped

3 radish, chopped

2 lime, juiced

Simple Dijon Vinaigrette to taste

Salt, to taste

Fresh cracked black pepper, to taste

1 avocado, chopped

PROCESS

Finely slice half head of cabbage, yellow pepper, jalapeño, red onion and radish using a hand-held mandoline. WEAR A GLOVE!

Juice the lime. Toss together into a mixing bowl, add in my Simple Dijon Vinaigrette, lime juice, and spicy salt. Let it sit in the fridge overnight.

When ready to serve, add the chopped avocado for a touch of creaminess to your healthy salad recipe.

Add on top of tacos or eat on its own as a refreshing cabbage salad.
