Chocolate Chip Banana Cookie Skillet

INGREDIENTS
1 cup mashed organic bananas, about 2
1/3 cup liquid coconut oil
1/3 cup Artisana almond butter
3 Tbs maple syrup
2 eggs - sub 2 flax eggs
1 tsp vanilla extract
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1 1/2 cup almond flour
1/2 cup Hu Kitchen Keto Chocolate Chips
PROCESS
Preheat oven 350 degrees. Grease cast iron skillet with with coconut oil spray, or line 12-inch pie dish with parchment paper, grease with coconut oil spray.
In a small bowl, combine 1 Tbs flax seed meal with 3 Tbs luke warm water to sub one egg. Double this for 2 eggs. Whisk together and set aside for 10 minutes. Flax egg should be gooey in 10 minutes.
In a med-large bowl, mash bananas, coconut oil, almond butter, maple syrup, flax eggs, and vanilla extract together. Use a hand mixer to ensure it is all combined evenly.
Add almond flour, baking powder, cinnamon and salt. Mix again.
Fold in keto chocolate chips. Add to greased skillet or pie pan.
Bake in oven for 20 minutes.
