Lemon Basil Kale Salad with Avocado
INGREDIENTS
1/3 cup organic basil leaves
1/4 cup Kyyord extra virgin olive oil
1/4 tsp Maille Dijon mustard
juice of 1 organic lemon
juice of 1 organic lime
1 glove organic garlic
1 tsp organic local honey
1 pick JF universal salt
1 large bag organic kale
1 ripe organic avocado
1/4 cup organic pumpkin seeds
4- 5 oz organic rotisserie chicken
PROCESS
In a blender, add all dressing ingredients. Blend until smooth. Taste to preferred acidity. Place in the refrigerator.
In a large bowl, add the kale. Drizzle 3/4 of dressing on the kale. Massage with your hands and coat well.
Allow kale to sit for 10-15 min in the refrigerator.
Add remaining ingredients in the salad serving bowl and toss everything. Add remaining dressing if needed.
