Grilled Salmon Lettuce Wraps with Mango Guacamole
INGREDIENTS
Salmon Marinade
1/2 cup organic coconut aminos
1 clove organic chopped garlic
1 tsp JF Spicy Salt
2 Tbsp dijon mustard
1 juiced organic lemon
2 Tbsp organic maple syrup
Mango Guacamole
1 chopped organic mango
2 organic avocados
2 juiced limes
1 minced organic jalapeño with seeds
2 Tbsp JF Spicy Salt
1 juiced lemon
1/4 cup cilantro
1/3 cup minced red onion
PROCESS
Salmon
Preheat the grill.
Marinate the salmon for 2-3 hrs.
Grill salmon to med/rare cook temperature. Depends on your grill heat.
I do about 4-5 min per side. I like this charred on the outside and pink in the center.
Rinse the lettuce pieces and place on a paper towel. Blot them so all the moisture is off. Leave them to dry fully.
Mango Guacamole
In a large bowl, add the mango, avocados, lime and lemon juice, cilantro, jalapeños, spicy salt, red onion. Stir gently.
Remove salmon from the grill and let it cool.
Place lettuce piece on a plate and layer the salmon with the mango guacamole and enjoy.
