
Zucchini Noodle Pesto Shrimp Scampi
INGREDIENTS
2 cups organic spiraled zucchini noodles
1 lb wild caught shrimp, cleaned and deveinedΒ
2 Tbsp vegan butter
2 Tbsp
1/4 teaspoon pepper
4 Tbsp Gotham Greens Vegan Pesto
3 cloves organic garlic- choppedΒ
PROCESS
In med heatΒ sautΓ© pan, add olive oil and garlic for 3-5 min.
Add cleaned, thawed shrimp.
SautΓ© until pink on both sides.Β
Remove shrimp for the pan and place in a separate bowl.
Turn heat up to med-high/high. Get pan really hot.
Add vegan butter, add spiraled noodles.Β
I use thisΒ food processorΒ to spiral my noodles. I love the thing. Cook until noodles start to brown.
Add shrimp back in once noodles are done. Add the vegan pesto. Top with vegan parmesan.
