4- 6-ounce pieces boneless, skinless cod fillets
Sea salt, to taste
Freshly ground black pepper, to taste
1 tablespoon olive oil
2 cloves garlic, crushed
2 tablespoons freshly squeezed lemon juice
2 tablespoons coarsely chopped flat-leaf parsley
Preheat the oven to 425 F. Cut fish into 3-4 pieces.
Take out baking sheet and 3-4 parchment bags. Line up bags on the sheet and open each one up.
Clean and pat the cod pieces with a paper towel and place them parchment bags.
Season the fish with a little sea salt and freshly ground black pepper.
Place each fish filet in a bag.
Add the olive oil, the chopped garlic, lemon juice and parsley, salt and pepper to each bag.
Close each bag tightly.
Bake for 12 to 14 minutes or until the fish flakes easily with a fork.
