Lemon Herb Grilled Salmon



juice of 2 lemons

zest one of lemon

3 Tbs local wild honey

1/2 tsp black pepper

1/2 tsp salt

2 Tbs dijon mustard

2 cloves garlic, mined

4 Tbs olive oil

5 sprigs of dill, chopped fine

5 sprigs rosemary, chopped fine

2- 4 oz salmon filets


Juice two lemons with a juicer. Grate the zest of one lemon. Add all ingredients to a medium size bowl. Whisk that up.

Add salmon filets to a glass sealable container. Pour marinade over salmon. Cover. Shake so filets are fully covered with mixture. Marinate for at least 4-6 hours.

Grill to perfection. I like charred on the outside and raw on the inside.
