Paleo Bomb Banana Bread



3 ripe organic bananas

1/2 cup vegan butter

organic eggs

1 tsp vanilla

1/2 cup vanilla coconut sugar

1 3/4 cups blanched almond flour

1/2 cup tapioca flour

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

Preheat oven 350 degrees. 

In a large bowl, mix banana, melted vegan butter, eggs and vanilla. Add coconut sugar to the wet ingredients. In a separate bowl, without overtaxing, combine almond flour, tapioca flour, baking soda, baking powder, and salt. Mix wet and dry ingredients together until well combined. Add chocolate chips. 

Prepare mini loaf pans with avocado oil.

Pour batter into prepared load pan. 

Bake minis for 25-30 minutes.

Bake full loaf pan for 50-55 min.
