Smashed Taco

INGREDIENTS

1/2 lb grass-fed ground beef

1/2 tsp chili powder

1/4 tsp cumin

1/4 tsp paprika

1/2 tsp salt

1/4 tsp garlic powder

1/2 cup vegan colby jack cheese

2 COYOTAS Tortillas

1/2 jalapeno, sliced

1/4 cup DIAMANDIA Simple Guacamole or smashed avocado

1 tsp Primal Kitchen Vegan Queso

PROCESS

In a medium bowl, add ground meat, chili powder, cumin, paprika, salt, garlic powder and vegan cheese. Mix well and form 2 balls.

Top each ball with two slices of jalapeno.

Heat a skillet to med- high heat. Place ground beef ball onto the skillet, jalapeno slice down. Top with a tortilla. Press down with a plate or a smaller pot or pan.

Cook about 3- 4 minutes or until meat is cooked through. Flip and cook a minute more.

Remove from heat and plate. Top with arugula, DIAMANDIA Simple Guacamole, salsa, sour cream, and queso. Enjoy.
