2 sticks vegan butter
2 cups sifted organic powdered sugar, to taste
1 cup date sugar
1/2 lb organic strawberries, chopped
1 Tspn maple syrup
2-3 Tb organic freeze-dried strawberries
Chop up strawberries, add maple syrup. Mash with a fork. Set aside.
In a separate bowl, add softened vegan butter and use an electric hand mixer to cream butter until light and fluffy – about 1 minute. Add sifted powdered sugar in 1/2 cup measurements and continue mixing until well combined and fluffy, scraping down sides as needed. Add date sugar.
Once fluffy, add in the mashed strawberries.
Use immediately or store frosting in the refrigerator for up to 1 week or in the freezer up to 1 month.
