Cucumber Sushi Roll with Smoked Salmon

INGREDIENTS

1 organic english cucumber

1 organic avocado

1 packet of wild caught smoked salmon

Violife Vegan Feta Cheese

coconut aminos

PROCESS

Using a mandoline, thinly slice the english cucumbers. As thin as can hold the weight. WEAR A CUTTING GLOVE.

Line up the slices of cucumber on a cutting board. Slightly overlap them to seam them together.

Cut avocado in half. Scoop out. Mash avocado into the beginning of the laid out cucumber slices.

Cut up the smoked salmon into slices and stack on top of the avocado.

You want to tightly build these ingredients on one end.

Cut vegan feta into long thin slices about 1/4" thick.

Stack them in a line next to the salmon.

Carefully begin to roll and stack the cucumber around the ingredients. Make this as tight as you can.

Slowly rolling and rolling together until you hit the end, forming a cucumber wrapped sushi roll.

Once you have a long log of cucumber, slice the log into 1/2 inch pieces to create individual sushi roll.

Dip in coconut aminos and enjoy this delightful sushi recipe, perfect for healthy eating and a great example of sushi without rice.
