Paleo Bomb Banana Bread

INGREDIENTS

3 ripe organic bananas

1/2 cup vegan butter

4 organic eggs

1 tsp vanilla

1/2 cup vanilla coconut sugar

1 3/4 cups blanched almond flour 

1/2 cup tapioca flour

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

PROCESS

Preheat oven 350 degrees.

In a large bowl, mix banana, melted vegan butter, eggs and vanilla. Add coconut sugar to the wet ingredients. In a separate bowl, without overtaxing, combine almond flour, tapioca flour, baking soda, baking powder, and salt. Mix wet and dry ingredients together until well combined. Add chocolate chips .

Prepare mini loaf pans with avocado oil.

Pour batter into prepared load pan.

Bake minis for 25-30 minutes.

Bake full loaf pan for 50-55 min.
