Roasted Cauliflower With Creamy Vegan Ricotta Tzatziki

INGREDIENTS

1 head organic cauliflower

olive oil

JF Spicy Salt, to taste

Black Pepper, to taste

VEGAN RICOTTA TZATZIKI

8-10 Tbs Kitehill Vegan Ricotta cheese

3 Tbs lemon juice

3 Tbs olive oil

2 Tbs fresh parsley

salt & pepper, to taste

PROCESS

Preheat oven to 400 degrees.

Clean and cut your cauliflower into large florets. Line baking sheet with parchment paper.

Add cauliflower to baking sheet.

Drizzle with olive oil. Sprinkle with JF Spicy Salt. Bake for 20-30 min until golden brown. While this is cooking, make Tzatziki.

In a food processor, add in all the ingredients. Mix on high until smooth. Add more lemon juice or olive oil to taste.

Plate by spreading sauce on the plate first then top with cauliflower. Drizzle with olive oil.
