Dole Whip Dessert Recipe

INGREDIENTS

4 cups small chunks of pineapple, frozen 

1 can low-fat coconut milk

juice of 1 organic lemon

1 Tbs vanilla extract

4 Tbs coconut sugar

PROCESS

Chop up whole pineapple. Freeze for 4-6 hours.

Place can of coconut milk in the refrigerator.

Juice one lemon.

Once cold and frozen, add all the ingredients to a blender. I am using the BEAST.

Blend until creamy. Add mixture to ice cream maker.

Run for 20-30 min to desired soft serve consistency.

Using a pastry bag, pipe into a serving dish for a healthy dessert. Or use an ice cream scoop for easy serving.
