Easy Healthy Tacos: Salmon & Slaw

INGREDIENTS
1 lb wild caught salmon, chopped up into 1 inch squares
1 Tbs chili powder
1/2 tsp black pepper
1/8 cup raw honey
jalapeno, thinly sliced
COYOTAS Tortillas- 6 inch
Spicy Cabbage Slaw Marinade
Clean Simple Guacamole
PROCESS
Chop up salmon into 1 inch squares. Place into a glass container that can be sealed. Cover with the Spicy Cabbage Slaw marinade. Add chili powder, black pepper, raw honey. Mix that up and marinade. The longer the better. At least 3 hours, but overnight if you can.
In a large skillet, on med-high heat, add the marinade salmon. Sear all sides. About 3 minutes each side until the honey caramelizes.
Heat your oven and place the tortillas so they start to crisp. You can also do this with an open flame on a gas stove. Bend your tortillas to give you a taco shell.
Stack your Spicy Cabbage Slaw in the shells. Add in the salmon. Add in Clean Simple Guacamole. Garnish with thin sliced jalapeƱos for a perfect taco topping.
These salmon tacos are a great option for healthy dinners.
