Smashed Brussels Sprouts

INGREDIENTS

2 pounds whole organic Brussels sprouts, ends trimmed

2 tablespoons virgin olive oil

2 1/2 teaspoons kosher salt divided

ΒΌ teaspoon ground pepper

ΒΌ teaspoon onion powder

ΒΌ teaspoon paprika

PROCESS

Preheat oven to 400 degrees F. Clean and trim Brussels sprouts. Steam until soft.

In a small bowl add all the seasoning and mix together.

Add parchment paper to a baking sheet. Once Brussels sprouts are done steaming, add them to the sheet. Drizzle with olive oil.

Using the bottom of a large glass or mason jar, smash each Brussels sprout until flat.

Sprinkle with seasoning.

Flip and season other side.

Bake the Brussels sprouts for about 20-25 minutes or until crispy.

Place some queso sauce in a small bowl for dipping.
