Greek Salad With Lemon Style Cod

INGREDIENTS

organic mixed greens

organic asparagus

organic peporicinis

kalamata olives

Violife vegan feta cheese

Fancy Peasant olive oil

organic red cabbage

organic red onion

juice for 1 lemon

DIAMANDIA Simple Dijon Vinaigrette

JF Spicy Salt

PROCESS

Preheat oven 400 degrees.

In a baking sheet, add parchment paper. trim asparagus and add to sheet.

Lightly coat with olive oil, sprinkle JF Spicy Salt. Roast 20-30 min.

While roasting, slice cabbage with a mandoline. WEAR A GLOVE.

Slice red onion.

Plate salad. Add mixed greens, cabbage.

Add red onion. Add pepperonis, kalamata olives. Chop up and add vegan feta.

Heat med sauce pan, add olive oil. Add cod. Sauce on high heat for 4 minutes each side.

Add lemon juice once finished cooking.

Add cod to salad.

Top with lemon juice and DIAMANDIA Simple Dijon Vinaigrette
