Shaved Brussels Sprouts Salad

INGREDIENTS

1 lb organic Brussels sprouts

1 organic avocado

1 Tbs garlic powder

1 tsp black pepper

1 tsp salt

4-5 Tbs white truffle olive oil

1/4 cup olive oil

1 lemon, juiced

1 jalapeno

1/4 cup Violife Vegan Parmesan

PROCESS

Clean and half your brussels sprouts. In a food processor, add sprouts. Mix them up to a large chop. Add avocado, garlic powder, salt, pepper, white truffle olive oil, olive oil. Add to taste. Juice the lemon with juicer and add with the pulp. Mix that up. Add chopped jalapeño. Stir by hand.

Remove from the food processor. Add to a large bowl. Grate the parmesan cheese and mix. Serve and enjoy.
